Beef to School: Connecting Cafeterias and Classrooms with Local Beef and Beef Education

Abstract

This poster showcases a multidisciplinary approach to strengthening place-based Beef to School (B2S) programs, which integrate locally sourced beef into school meal programs and classroom education. The project focused on two key deliverables: 1.) Updated “Frequently Asked Questions about Beef to School” Guide – Developed using insights from school food service directors, beef processors, and other stakeholders, this revised resource addresses common questions, includes real-world examples, and features new appendices for clarity. It was distributed to over 200 school food service directors, processors, and educators. 2.) New “Adopt-a-Cow” Beef Curriculum – Piloted in seven school districts, reaching 230 students in Fall 2024, this curriculum teaches students about beef production, history, nutrition, and the beef industry. It includes interactive elements such as virtual escape rooms, a board game, and children’s book recommendations. By packaging these resources together, the program equips schools with the tools to source local beef for cafeterias while educating students on its production and significance. These materials have been distributed to 110 educators and 50 processors, with additional outreach through webinars and an updated web presence. This program illustrates how an integrated approach to beef education and local sourcing can create a more sustainable, community-driven B2S model that benefits students, schools, and local agriculture.
