Cooking Like a Chef Summit

Abstract

To mitigate the overweight problem in SC and to elevate cooking and healthy food choice for youth, the Healthy Living Committee offers Cooking Like a Chef (CLC).  In 2024 the CLC event provided hands-on experience with food professionals. While CLC is a one-day event, the goal is for the youth in attendance to take their knowledge learned and share it within counties as a summer camp.  CLC summit hosted 34 high school youth from 14 SC counties and 23 4-H agents/volunteers.  A prequestionnaire was administered. The youth worked with culinary professionals on skills, techniques, and kitchen safety while rotating through five menu stations. They then divided into 4-person county groups to complete a team cooking challenge. Post questionnaires were administered. The pre score average was 71%; the score increased to 87% on the post.  Focus groups via zoom were conducted with participants as well as with agents.  The focus groups provided feedback about what worked at the summit and provided an opportunity to share changes they would like i.e. continuing to allow collaboration and teamwork, continuing to provide autonomy during the cooking process and providing more time for rest and reflection.  Feedback provided from participants and volunteers will be considered while planning the 2025 CLC Summit. The next summit will be conducted as a culinary teaching session in the morning and a coaching practical with the team cooking challenge in the afternoon.
